(NC)—Minutes matter when it comes to getting kids out the door and on their way to school, but this shouldn't stand in the way of a well-balanced breakfast.
Children need proper nourishment to give them energy for their growing minds and bodies. The value of starting the day with a healthy and nutritious breakfast that is high in protein should not be overlooked.
“A breakfast that includes a high quality protein, like eggs, keeps kids feeling full for longer, which helps them to concentrate in the classroom,” says Karen Harvey, a registered dietitian with Egg Farmers of Canada. “Research shows eating a well-balanced breakfast can increase a child's attention span. This can help to improve memory, problem-solving skills, school attendance and test scores.”
As Harvey points out, there are many quick and easy recipes for a perfect start to the day, including the following recipe for Basic Microwaved Eggs:
Spray mug, small dessert bowl, ramekin or custard cup with cooking spray and sprinkle a few grains of salt into bottom (this helps to cook the egg evenly). Break an egg into container. Pierce yolk and white with fork four or five times to bottom of container (piercing helps to prevent the egg from "exploding" during cooking.) Cover with plastic wrap, pulling back small area for venting.
For Soft-Cooked Egg: Microwave on High (100% power) for 30 seconds, or on Medium (50% power for 50 seconds). Let stand for 30 seconds before removing plastic wrap. If still undercooked, turn egg over in container, cover and microwave for another 10 seconds, or until cooked as desired.
For Hard-Cooked Egg: Microwave on High (100% power) for 40 seconds. Let stand for 30 seconds before removing plastic wrap. If still undercooked, turn egg over in container, cover and microwave for another 10 seconds, or until cooked as desired.
